Lunch: Grilled Chicken & Chickpea-Carrot Slaw over Greens

cimg2012.jpgYou guys, this wasn’t my favorite. The flavor balance was all off. It’s a cold dish with a big pile of greens (and I say that loosely because it’s mostly iceberg lettuce + a little romaine) topped with a slaw made of carrots, scallions, red cabbage, roasted red peppers, and chickpeas, along with some grilled chicken. The slaw and chicken have a dressing on them that mostly seems to be vegetable oil and dried oregano — not enough acid, not enough salt, and somehow (even with the oil), not enough richness. It’s pretty heavy on the oregano.

This would totally benefit from the addition of some nice feta cheese (and I guess you could do that with one of your daily dairy servings), but even then I don’t think it would be fantastic. There’s far too much iceberg lettuce, so the main flavor of the dish is iceberg lettuce… not very good. Also the red cabbage provides an unfortunate purple tint to any pieces of chicken or chickpeas that happened to be sitting next to it in the container. Also, I totally craved sugar after eating this — a definite sign that the flavor balance just wasn’t right. And Mr. Peanut found it physically challenging to eat at the office where he didn’t have a plate or bowl or anything to put it in. Bummer!

HOWEVER, this dish does have one redeeming quality: the chicken. It’s, you know, an actual piece of chicken, as opposed to the processed chicken debacle we had last night for dinner. A welcome change!
