This is lunch for Tuesday, Week 4, Diet to Go!
The “meltover” is a piece of pita bread with pesto sauce on it, then sliced tomatoes, then melted cheese. (I cut my meltover in half to fit in that container above in the photo.) I ate it cold and thought it was very delicious! I think heating it would work better in a toaster oven (which I didn’t have available to me today), but Mr. Peanut heated his in the micro and found it very delicious. Then there is this piece of “apple cake.” I thought the apple cake was all right – kind of coffee-cake-like. The texture is on the rubbery side, and Mr. Peanut microwaved it, which I theorize exacerbated the rubberiness and made him not like it. I liked it okay.
I think it’s on the lighter side for lunch, but it was still quite filling. Mr. Peanut’s 1600-calorie version included what you see above and an additional meltover made out of a mini-pita and he thought that was a HUGE meal! So it all depends on your perspective, I guess!
